Hi Y'All,
Sorry to drag up an old post for my first post however, just can't find the answer.

I have done a number of TPW's on EC1118 all with the same result. The krausen (yeast cake on the top) even after 6 weeks is still just sitting there on top. Is it supposed to sink? With Lowens Bakers Yeast, after 10-14 days it sinks to the bottom and starts to clear, as one would expect.

It has finished (static SG 110 >> 101, slightly high but it has finished). I can supply all of the details of what I did but surfice to say I follow the directions, with supplementary info from this site and others to the LETTER. Rehydreated, aerated, acid buffer, constant 23C.

So is the yeast supposed to sink to the bottom after it is finished, or is that just not what EC1118 does.

Almost a year later to reply but I found the EC1118 went straight to the bottom, bubbles away for 3 weeks in Sydney winter temps and then just stopped. I used an aquarium heater after the first week and set it at 26 C and it worked after a lacklustre first week at 18 C.
I’ve got this hankering to carbon filter the wash and then macerate a dozen botanicals individually for days/weeks/months just to see what happens to the taste. And then macerate the same items after distilling the wash.

Found it to be slow as well... but it’s a lot warmer in FNWA...

Mind you, it cleans the wash out to dead dry.

Have a taste of your wash, if it tastes dry then it’s good to go... ours took quite a while (5-6 weeks from memory), but that could be just me spewing up the wash!

An only very slightly off topic question. Has anyone compiled/published a table of optimum temperatures for the range of yeasts that are generally used in stilling?

As an example I am using "Pure Distilling" Premium Spirit Yeast which gives an acceptable result but needs to run above 30 C or it can take a long time in a TPW. Interestingly this yeast only wants 8 kg of sugar in 21 L of water with no other nutrients mentioned.

I'd be more concerned about using that amount of sugar to water ratio. That's a lot of sugar and the wash alc % will be high, but not necessarily good quality alcohol..

That's cause it's a turbo, the pack contains nutrients. As already said, too much sugar.

If EC1118 is slow and more expensive would starting the wash with a lower starting gravity and adding sugar later in the fermentation let the yeast get a better start .
