Rum wash vinegar taste

I have a molasses & sugar wash that has been sitting in the shed for a few months as I haven't had the time to run it. I have smelt it through the air lock every few weeks to make sure it was still ok. Was hoping to run it tomorrow, but just noticed the water in my air lock has evaporated and my wash has a vinegar smell and taste to it. Can definitely still taste the molasses, but has that white wine taste also. Wash looks fine, no mold.
Is there any hope for it? Or just start again. Rum wash is cheap. Just puts me out another week.

Except about 3 hours lol. Do vinegar flavours carry through? I read that vinegar has a higher boiling point than water.. I suppose I might be able to tell part way into the run if it's no good.

Thanks mate, yeah, I think I might put the time into starting a new batch.
