ujssm

Well while waiting for the cyclone Veronica to disapate and wait for my new 5SD 4" pot sill to arrive once the road are officially opened again. I decided to start my first weevil infested UJSSM , now im wondering how long I can leave this in the fermenter? is it just like all the other washes, I cant see why not. the co2 jacket keeps it covered.. but ive been reading a lot of conflicting info with this wash. tpw, turbos have all been fine to sit for a few weeks once finshed. also I seem to be reading that once its finished ferment you need to keep the process constanly going with in 24-48hrs?. which I don't have the constant time for. have also read about freezing the backset to help with this. I plan on freezing the backset once im happy with a certain generation to keep the flavour. ok, long I know , but us cyclone people are bored, say I was to make a 25L wash for 4 gens to save on spare room space, then decided I wanted to make 2 25L washes for gen 5, can I just create equal amounts of backset with new corn in each ? or do I need to start again ?

I left G5 sitting there for about a month, while I spirited G1-4. Stripped G5, then G6 fired back up again with no issues. G1-4 on oak after a couple of weeks is just too good - hope I can keep away from it for long enough.

There is a potential for the weevils to cause a issue with an infection, but just keep it sealed and you should be good

My g6 has been sitting for 2 months, not worried, worst case you pitch some more yeast

I use fores in my Air locks, just and extra level of biological security

What you outlined for the split wash is fine and common practice, the yeast bed will breed up in the flesh grain

Freezing is for kick starting gens in a new wash

OK, thanks. so would I just put all new corn, yeast and suger in the new second fermenter? or do I need to try and split the original yeast/corn bed?

What oak do you find works well for it? ive got American med, and heavy toasted and French med toasted

In a 3 litre jar I use 2 heavy toast American Oak and 1 medium toast French.
In the past I have used just 1 heavy toast American per litre and got excellent results as well.

I've gone 2 medium toast american oak staves, as a first attempt. I'll monitor it over time :obscene-drinkingdrunk:

I have found that for extended ageing times, say more than 6 months, less oak is better.
I go for one oak domino per litre of spirit at 65% abv if I'm ageing for 3-6 months, if I'm ageing longer that 6 months I reduce the amount of oak a bit, usually 2 dominioes in 3 litres of 65% of spirit so I don't over oak my final spirit.

With doing 2 gen 5 runs split your grain bed and back-set or you'll have 1gen 5 and 1 gen 1

ok thanks mate, once I have the backset, ill divide the corn bed and yeast into halves and start both up again. will I need to add more yeast? or just wait and see if it fires up?

If you do it correctly you shouldn’t need new yeast

one more question , how do I go about freezing the gen 3 as will be on holidays for 2 months. do I freeze backset only? and if so how will I get gen3 to fire back up again as there will be no grain / yeast bed? or do I freeze the backset and grain/yeast bed ( will this still fire back up?)?

Freezing generally refers to the backset and/or the solids left behind in your FV. That is what adds the next level of flavour to your next generation!
The wash/wort (liquid you will distill) can be decanted/syphoned into a ‘cube’ or other sealed container and stored until your ready to still it.
