The easiest way to know if it's fermenting is are there small bubbles on the surface/fizzing, if the answer is yes then it's fermenting so leave it alone.
When there's no bubbles and the wash has cleared taste it. Does it taste dry, sour or bitter (depends on the wash) if so it's done.
There's no need to be more technical than that! I've not had airlocks for yrs and half my fermenters don't even have lids anymore and the whisky rum and gin hasn't suffered one bit!
