Bacardi/White Rum

My missus loves mojito's so I want to make something similar to bacardi. I tried leaving some of my rum white but it is way to strong. I was thinking of running a batch of rum through my 4 plate bubbler with the 500mm extension filled with SS scrubbers on too. Do you think that will remove too much flavour?

I run my rum wash through the Boka at about 92%. Comes out as a beautiful bacardi after letting age for a bit and cutting back. The missus uncle only drinks bacardi and he raves about it. You'll be seriously suprised at how much flavour from rum comes over at that %

yeah reflux the guts out of it to lighten it up, molasses is one of those flavours almost impossible to distill out ;-)

I found the best white rum I made was using Weatbix neutral and a standard Mac rum wash. About half and half, and then distilling it with my VM to high purity. :handgestures-thumbupleft:

Did you charge your boiler with half/half of the wash Matt? Thats a cool idea. I will give that a try too.

I collected 10 litres of Weatbix neutral low wines, and 10 litres of Mcrum low wines and ran the 20 litres all together through the reflux :handgestures-thumbupleft:

Well I just ran 20L of rum wash through 4 plates and a 500mm packed section full of SS scrubbers and it still has heaps of flavour. I see what you mean by impossible to distill out Mac. Do you think I could use water to bring it back down to 40% and run it again? Or will that remove too much flavour?
I think I might get some scoria, from all accounts it is great at removing flavour.

Me personally (IMHO) would make a molasses wash with very little molasses, then run it through 4 plates and a packed section for a crisp light rum.

In your case now I think watering down and redistilling is fine, or you could blend what you have with neutral until you get the light rum you're after ;-)

Yep I would blend it with neutral like Mac said. I have done that plenty of times with rum that have been a bit heavy on the molasses taste and it works well. I have also found that with white rum you have to be quite brutal with your cuts. You don't want any tails in it whatsoever.
