190L TPW Recipe using EC1118

G’day all,

Going to try me first large scale TPW of 190L thanks to Smbjk free 220L olive drum giveaway :handgestures-thumbupleft: .

I’ve got some EC1118 yeast coming from the group buy and have never used this before either.

Can someone leed me to a recipe using this yeast and volume of ingredients for a 190L TPW, or do I just upscale and back off the EC1118 yeast a bit.

Interestingly enough I am going to make up a 200L wash of TPW this afternoon.

I was gonna just upsize the 25L wash ingredient list (40kg sugar, 1.5kg tomato paste) but then get a jug of wash and make a starter with 25g of EC1118. But its my first crack at a TPW this size so take my advice based on that.....

I did a bit of research on that EC1118 yeast today and found it basically a champagne yeast and a very versatile one to boot aswell. I found a topic with it on the HD forum and the basic consensus is to hydrate the yeast before throwing it in the wash. Also the yeast is a leaves a clean finish with low lees and depending on conditions can finish very quickly or can take weeks.

Can't wait for my kg to turn up and get some small (30Litre) batch's done using the yeast in preparation for my bubbler build.

5g will start a 25l wash so I'd use ~40g give or take a bit. Starter is the way to go. Rehydrate in some water or wash @25C and keep the wash warm and you should be right :handgestures-thumbupleft:

I ended up sticking 40g in as suggested above in a starter of warm wash - took off no worries and I have a submersible aquarium heater in it to keep it ticking over at 27C.

I'm a bit surprised I can add anything, but ...

I have used EC1118 a number of times to ferment apple and pear ciders. Being a champaign yeast, it sucks the sweetness out of the mash really well and finishes fairly clean, but can take some weeks. Never had trouble getting it to take, and I'm no expert.

I ferment in a room with a temp around 18 degrees and have only occasionally used an external heat pad. This yeast was recommended by the brew shop because it will work at a lower temp.

I'm putting down one of these 200lt jobs now but I only have 1400 grams of tp, should be 1600. Any substitutes I could use, or add it tomorrow maybe?
Btw, 40kg of sugar looks ridiculous all in one place 8-} :laughing-rolling:

Res ,you're only 12.5% low ...I've been short on Tom Paste before and it didn't seen to make that much if any difference .

You can through some DAP in if you are worried and have some lying around

Now use 50l Keg with Pot head for Rum and Neutral stripping runs on gas .
LM/VM head with 1m packed 2" on Still Spirits boiler for Neutrals.

Sounds about right ...based on Winos plain old sugar wash uses 1 teaspoon in around 25 liters ...should fill your deficit quite well

res / h_b how did it go? (any one else please chime in as well)

Did you aerate with an air stone or just shake the shit out of it before pitching the yeast?

If I use an air stone do ya recon a couple of days’ worth would do or don’t worry so much?

Did you use 2tsp citric acid? (As per upscale)

Vitamins B tablet (any?)

What do ya recon about 45g of rehydrated yeast being used to make sure?

Geeps you really don't need to go to extremes. Splashing the water into the big barrel or squirting it in under pressure with a hose will give it the oxygen it needs to get going. Well that's how Ive done washes that size and smaller and Ive not had one fail yet.
