No molasses rum ferment

Postby CH3CH2OH » Thu Jul 30, 2015 6:39 am

I was chatting with a few commercial and hobby distillers in the US that use no molasses in the rum ferment, only natural brown sugar, unrefined cane juice or panela. One guy starts with a high abv around 14% with EC1118 yeast and nutrients. After fermentation is done, racks off into a container and adds a few pounds of molasses to the wash, mixes it up and dumps it into the boiler. I am wondering about Uvaferm 43, since I have it on hand.

Supposedly gets a higher ABV wash without having to worry about the inconsistency of molasses. He says he gets a really good flavor profile from adding the molasses in the boiler while distilling it.

Anyone try this before?

would love to try panela wash but i havnt won the lottery so i cannot afford it yet!!
brown sugar is just white sugar with molasses added...
i cannot imagine it being the most economical way to make rum- a waste of all the sugar in the molasses and the inability to make generations. i would be worried about the burn in the boiler as well

Kinda sounds like "forcing" the flavour/issue rather than making a true product, not for me thanks. In the big bad world of profit and time/resources you can keep it, I'll make my mistakes in the old world.

If I'm outa line then tell me to shut the hell up, can't make a silk purse out of a sows ear.
