all about mashing and fermenting grains

Corn AG FG is down to 0.990  very happy! currently straining it thru a bed sheet, then the Corn grain-sugar head will be strained next... corn AG is taking its sweet time, tho!
most of whats in the bottom now is just yeast cake and corn meal mud... thinking about cutting my losses and dumping it so I can get into the sugar head!

Had hoped to perhaps strain the mango wash as well but that needs to be in the fruit thread!

Back to the Corn AG SG was 1060, FG is 990 so thats an estimated 9% ABV which is not too shabby (for me at this early stage of my AG journey)... and I'd hesitate a guess that I've got at least 40L of wort there which is a good boiler charge for my keg boiler!

Hope to have something similar with the corn sugar-head...

Corn lot 3
6.5kg corn ground finer see photo above on my previous post
4.5kg pale ale
1.4kg rice hulls
40l strike water added. Temp after grain added 88.87c. Time 9.11pm sat.
10.30pm malt added stired well 64c added 1l water sealed up at 64
1.0pm 15 brix 1.0611 from top 4 brix 1.0157 from bottom drain. Recirced by buckets gravity 1.061Re check two more hours. @3 oclock
1.062sg
4 oclock Stable 1.062
4pm sparge started 18l at 65c
45l at 1.047 62% effeciency. was aiming for 1.057 75% effeciency gives me something worth fermenting. I think my sparge let me down this time as the deadspace wort was at 10brix 1.040 gravity. So I added it to get me my 45l. I reakon corn is more thirsty than barley and holds onto more water..lets see what it ferments down to :handgestures-thumbupleft:

One thing I learned today I should be able to recirc the wash even with corn. I recirced for a fair while today using buckets and the stopped then sparged couple hours later I should be able to use rims no issues.. :handgestures-thumbupleft: No more all grain now until my rims is setup :handgestures-thumbupleft:

Mi used up the left-over corn (10.3kg) killed to 1.2mm then added 45L boiling water and waited for the temp to come down to around 65C... then added 6.8Kg of malted Barley (maris Otter) and the left it in my EskiTun for more than 24 Hours (work constraints).

I didn’t sparge it because ... can’t recal... scoop d the corn mash out with a sieve (pointy commander) to squeeze out the fluid and dumped the squeezed grain in to another FV. The liquid I of the AG I mixed with my whisky yeast and sealed the lid... then added 8Kg is raw sugar and topped up with white sugar to 12Kg... and filled the FV with close to 40L of boiling water...waited for the temp to come down and added the same yeast...
waiting for the AG to finish draining so I can do the sugar-head next...

Haha. Being really busy this weekend I used a ratchet strap and a bed sheet over the EskiTun as a strainer... and I recon it’ll be the way to strain the corn from the wort! The wort I’ve collected is brown but clear!

Will test it on the sugar-head corn grain when the sludg has finished draining from my he AG Corn! See how it goes... might be how I drain the wort from now on (until I get a better system) MUST be better than bloody-we’ll squeezing the grist! Surely!! 8-}

Might even work for fruit mashes...

I hate squeezing (except for ... maybe... ...erm, can’t say right now :D ) but yer looking to let it drain instead of squeezing!
Lazy but hopefully a good way to go! All will be revealed later! ;-)

Rito, sheet is on the EskyTun, ready to strain the grain from the wort...
Left the yeast cake and corn meal over nigh to drain as best as possible I recon I got closer to 50L of Corn AG wort, perhaps more?!?...

So now I’m repeating the process with the Corn sugar head. Most striking difference is in the smell! The Corn AG smelled nice and very beer like, this sugar head smells very very different... is that normal @bluc?

Will be able to get the SG tomorrow some time attached work :puke-huge:

Anyone got any comments on their products that have been aged for a while? Are they awesome yet?

I did my first ag wash last week.
21l wash volume
6.25 kg ale malt
1.2 kg munich malt
500g special b
Yeast m1 whisky yeast
I ended up with a 1.080 bang on sg
And finished with .980 which is a bit lower than my 1.020 expected fg.
2.5l/kg which gave me a 70% efficiency.

I learnt that i need a proper mash tun as i have no false bottom in my esky and i was stuffed after squeezing grains. Also with no drain on the tun i did share a lot of liquid with the floor.

I bought a cheap bottle of sherry to pre soak some oak that i want the spirit run to sit on for a time.

Thanks for the great thread i found it very helpful.

Sweet nailed it first go :handgestures-thumbupleft: :D My all grain whiskey/ peated is was pretty good and more than happy with my results, I didnt even know I liked peated whiskey until I was givin a small sample from a mate I met through this forum. Now after rum is my fav drink :handgestures-thumbupleft:
My american whiskey jurry is still out on a desicion. It has some weird clovey spicy and aniseed-ish flavour up front, the whiskey/peated was very fruity early on so I think it just needs more time, not sure where that came from but more time will give me a better idea...I I have only done whats written in this thread as far as all grain goes. But plan on doing plenty more..

My last all grain corn mash has been on 1.0000 last 4 days gives me 6.06%abv should give me close to 2l at 65%. First lot corn gave me a litre at 65%(possible leak) second got 2l @ 65 but I added 3kg sugar due to crap og.. :handgestures-thumbupleft: is fun and learning heaps. I will sqeeze in a 100% corn (with hulls) soonish too to see what its like to mash, sparge and of course drink :handgestures-thumbupleft:

I really want to do all grain bourbon but the corn and rye really makes me think hard about it.
Unlike EZi i dont really like blowing a mash tun.

The bwko recipe i have similar flavours that your are describing with your all grain examples and i am not really enjoying it right now. It is not what i really want.

I will keep playing around with these malted grain mash runs for now and gather a little more research on different techniques for a bourbon.

All the best for getting your bourbon flavours you are after i will be following closely.
