Thought this may help someone. Its a excell spreadsheet to calculator new wort gravity when two different worts are mixed. Thanks to ezi tasting for doing the spreadsheet for me :handgestures-thumbupleft:

Just drained mash tun from first lot 100% corn using enzymes. 38l sg of 1.066 effeciency of 75.13%.
10 kg corn 15l rice hulls 4:1 mash thickness 10l sparge water. Sparged at 70c. Happy enough with that :handgestures-thumbupleft:

Thought I would add couple pics. Corn grind and pic of corn rice hulls mix. Make sure you soak rice hulls then drain and mix well with corn before adding to mash tun

Also gelatinize till corn swollen gloopy or better still near solid mess in mash tun. Add enzyme give it 15 mins or so for it to liquidfy then you can start recirc the wort :handgestures-thumbupleft: trust me you cant recirc while gelatinozing you will end up with a blown element and or pump..dont ask me how I know :laughing-rolling:

It always takes one there mate to learn the hard way for the rest of us to hopefully not make the same mistake.

same place as the cracked corn. they are used for chicken bedding scratch fodder 80l slightly compressed bag was about $15 :handgestures-thumbupleft:

edit: to get crack on cracked corn I did one pass on smallest gap on twin roller malt muncher :handgestures-thumbupleft: apparently they are not designed for corn but I have put "a bit" through it :handgestures-thumbupleft:

Will see how long it takes to die... Proper one suited to corn is about $500 landed :o :shock: :sad: The malt muncher can be had for $60. If I can get two years munching corn I will prob just get another cheapy for now. Malt muncher has been going 4 years now but have prob only put 6 or so bags corn through it..Mostly malt barley..

Another lot corn 40l at 1.045 62% effeciency My cereal mash(gelatinization) let me down as I got sidetracked and had to go out. Anyway still happy enough And I think I have covered everything now Will post back next round of malted grain. Feel free to ask here or pm me if you have any questions :handgestures-thumbupleft:

Thought I would add angel yeast technique to this thread.

10kg feed barley and 40l water at 30c 50g angel yeast stirred twice day for 3 days then let sit for 3 weeks gave me 1.6l 86% 2l at 65% in my demijohn..

No enzymes? how does that work with unmalted barley?

I've got an interesting project underway. Started making a batch of whiskey about 18 months ago using all Manuka Smoked malt from NZ. I did the stripping run, but got distracted before I got around to the spirit run and forgot about it.

18 months later I plan to do the spirit run, would any of this time effect the taste you think? Suppose I will find out soon.

Check out the "mash not requiered" thread when you use that particular yeast forget everything you learned bout mashing. Follow directions in the thread. Eady and it works. I got about 75% effeciency using it..

So my 'aged low wines' run went well. Been aging for a month in glass with some charred oak.

Seems smoother than my last batch. Pretty much zero smoke was anywhere to be found though :(

I wonder what the difference in taste of finished product would be between unmalted grain fermented with that creepy black magic juju yeast or traditionally malted grain, any thoughts?

I have read that sometimes the smoke or peat flavours people are chasing tend to hide in the tails. :think:
You may find it may come to the table after aging on oak for a while.. oak does all sorts of things to spirits, both good and bad under different circumstances.

I'm using malted but not dried or kilned barley with malted rye atm with that angel yeast and the flavours are soo similar to a traditional AG malt barley mash (excluding the rye flavour). Im yet to try unmalted barley, but im thinking its gonna be fairly similar. Going to have a go at an unmalted oat whiskey too when i get a spare fermenter. :handgestures-thumbupleft:

I did make a 6" jaw crusher in my quest to find gold on my 85 acres but I do think it may just prove to be a great corn crusher, just set the gap to just meeting and throw the corn in and I may need to make a vibrator to get the corn down the Shute :laughing-rolling: Now with the warmer weather may just have to put down some barley malt, with this one I do have to get a sack of rye so the all grain mix can be right.

Hey pat_00,

How was the smoky-ness of your initial stripping run? I've just done a stripping run on some manuka smoked malt (2 x 25l) and thought it smelt pretty good/smokey. Waiting to get the next lot fermented and stripped to run it all again and get barrelled.
