Mash temp question

If you mash ag to high a temp is it possible to get a high gravity low fermentable(low yielding) wort?

My understanding is you will get less starch conversion, which would result in a higher amount of unfermentables. Shouldn't have a high SG unless the unfermentables throw it out like Molasses, you will most likely have a high FG. How high a temp are we talking?

68 when grain added. I got good sg but no hearts and am working through what could have gone wrong. I got expected amount of low wines but no hearts..in spirit run.

Can you post your whole process? seems odd to get no hearts :think: When I was pot stilling my cuts were never as clear to me, apart from the very middle of the run, as they are now. How have your ag runs gone in the past?

Only done couple ag and both flopped (i know have an insulated mash tun wich should help heaps)
Ok so grain bill 6kg pilsner 1kg choc malt 1kg caramalt. strike water full volume mash 30l plus topped up grain absorbtion amount.(done in a 60l barrel) 1l per kg? Temp 68 wrapped in doona stirred 4 times during rest. From memory think i left overnight. I ended up with 1.060 fg and iodine test was good. i got healthy 5l low wines but on the spirit run it went straight from heads to cloudy tails..i wanna do some more ag in a week or so and wanna get it right..

I'm reading 1l per kg of grain for you strike water? you want to go at least 2.3-3L per kg. Your SG of 1.060 looks good. Got me wondering if you have a leak somewhere? Is your new tun temp controlled or just insulated? Some time in the next few days Ill pm you one of my recipes and detailed steps, its a old one from when I was still doing BIAB. What grain do you have on hand?

Sounds good tas new tun is just insulated. I have grain to do 50% peated was gunna mash 18kg grain (1/2 peated) to a volume of 60l. Really want to get some real scotch down for chrissie asap...

How fine are you cracking? I have mine set halfway between 025 and 050. I also never leave my ag mashing over night, do you have a wort chiller?

Just cracked from hbs (now have a mill) no wort chiller yet and dont plan on boiling..

You still want to cool asap, the quicker into the fermenter and the yeast is pitched the better, lots of goodies for the nasty bacteria to get into. What yeast are you using?

Saf spirit american whiskey last time round..getting a bit long in tooth will try rehydrate before adding..

I've tried it with a Barley mash an it worked ok, I would recommend trying Malt Whisky yeast or safale US 04-05, I've never been that happy with the American Whisky yeast, almost used 500gm of it now. It has always seemed quite sluggish, do your ferments go harder than a rum wash?

Are you saying your strike water was 68? If so that's way too low. As a rule, your strike temp should be 73 so that by the time you add your grains and finish mashing in your temp should be 67. If your mash was 68 then disregard my post as 68's within the acceptable range :think:

Yea 68 degree rest..I was aiming for 65degrees rest. Read 5 degrees above target rest temp is a good rule of thumb but it didnt drop as much as expected..

Anyone used StillSpirits Distillers Yeast for Whisky?

We do have Saale US-05 yeast, but the StillSPirirts is the other brand that we picked up...

Go the Safale, tried that shit when they first released it, just another turbo with some extras added, better flavour profile with US-05 IMHO :handgestures-thumbupleft:

Essentially, I was querying your amount of strike water. 30L for 8kg's is pretty high. I use 2.5kg/L - allowing for 1l/kg absorption loss. What's got me a little ferked is your OG of 1060 is ok and you achieved full conversion :think: I'm guessing your wash was pretty watery? What did your FG finish up at? I'm keen to understand and/or help you find the problembo mate. :handgestures-thumbupleft:
