A yeast that ferments AG that dry for would be great.. i might have to give some a go.

Hey Georgio, you can check out my multiple AG Bourbon threads in my sig links. AG are always super-quick, normally done in about 3 days for me and you don't want to leave them past 4 days or they will start to develop bacteria and ruin your hard work! Certainly no 7-14 day sugar ferments here!! Great to see the AG whiskies getting a run! :D

Thanks Brendan. Love AG. Such a rewarding feeling :obscene-drinkingdrunk: . Have managed to get a hold of some malted Corn and Malted Oats. So next mash bill will be 70% Malted Barley, 20% Malted Corn and 10% malted oats. Hoping for a lighter and brighter whiskey. :-B

Mate, love it! I love experimenting with different grain bills. I've become a bit of a white sugar snob, trying to ferment with sugars extracted only from raw ingredients - just feels more rewarding to me.
