Ok so an update. Its at 9.5% and Apparent attentuation is at 100% -100% effeciency. I dont know how accurate this is until I still it. As I said earlier big spikes are from when I removed ispindle and stirred it.

thinking more on that I guess it wouldn't be accurate due to moving the device and getting the artificial high reading. Still interesting watching it ferment.. :-B

Would definitely be weird for it to jump 8%+ overnight!

bluc, is the temp correct? I believe Angel likes it pretty warm to hot.

Will be stripping the all cracked corn today. I added 20% backset to it yesterday. This morning it had a nice pellicle on it and was smelling great!

Yep temp is correct. Is still very active even at that temp..

Judging by graph I would say that fermentation is done. 7 days and way cooler then recommended :handgestures-thumbupleft:
Will leave it another week and do one more screenshot. :handgestures-thumbupleft:

:text-+1: on the extra week, you should bear in mind that the enzymes will still be working slowly and what sugar they are giving off will be consumed pretty much immediately, also the last spike you got (stirring?) it still showed 1.040. im not sure I would put much stock in that 9%

Might be interesting to take a "wine thief" sample from the bottom and test that with a regular hydometer, maybe give it a good stir and see what the difference is after?

Current gravity is as accurate as I can read a hydrometer. Your right I dont think we can take any notice of the abv reading as there is big peaks were I took ispindle out to stir it. So device would have included them in abv calculation. Have done couple readings with hydrometer highest i have aeen is 1.015..
Have to take spindle out remove lid to turn on off so not sure how I could avoid the spikes. Pity software does not have pause logging feature..

Can’t wait to see your results when you run it. Make sure you give us a detailed report. Should have asked earlier but how fine did you mill the barley? Looking forward to adding a bit to this thread as soon as my yeast arrives.

Plan on going through my cuts tonight.
Got around the 3 ltrs roughly from 40ltrs of wash... went down to 20% Abv.

What flavours are you hoping to get from the oats beerswimmer?
I've got a bin of oats there so might have a go with some at some stage. Got some malted Rye there too that needs to be used up.

Dan what was your original recipe? The 40l is that what you put in at start or what you recovered?

10kg of corn split into 2 fermenters topped up to 27 ltrs each. Racked off 45 ltrs and managed to get 40 ltrs from that into boiler. There was quite a large amount of corn sludge after settling. :handgestures-thumbupleft:

Not sure if i did my figures right, but following blucs method the efficiency came up around the 90%.
Either way im stoked with the result and will be doing a few more ferments with this yeast.
Being that i really like to get the most from my ingredients, ive put the spent corn back in the fermenter with some sugar and we'll see what comes of it.

You've done a fair bit of AG, I calculate that to 40l@ 7.5% wash - how dose that compare with your normal methods for 10kg of grain?

That doesnt suprise me... my corn wash got below 1.000 so i thought you may have got a bit lower.

I didn't think to compare my figures to my standard AG ferments... good thinking RC AL.
So my last 2 AG barley mashes i got around 1.5 to 1.8 litres from 9/10kg of barley before cuts.
The corn with the Angel Yeast was 2.85 litres from 10kg before cuts.
Big difference isnt it... provided the enzymes in the angel yeast do the job, from then on there shouldn't be any loss of gravity pts from a poor sparge ect.

Yesterday I poured boiling water on the grain for 2 more 30 gallon ferments to sterilize, this morning I topped up to 80% with cool water and pitched yeast. I also used a paint stirrer today that I bought yesterday instead of stirring with my paddle, it makes a vortex in about 10 seconds! Way better! These should be even better with the improved mixing.

The vortex is really the key in my opinion to getting oxygen into the wash. You can hear it really churning the liquid. :handgestures-thumbupleft:

Hey Dan. Just out of interest, any results from the sugar wash using the spent corn?
