Angel Yeast & Grape Bubblegum

Postby BigRig » Fri Apr 07, 2023 8:37 pm

I put an AG wash down 60% corn, 20% Barley, 10% wheat, 10% oats, all stockfeed and unmalted. Ran the grain through the mill twice but still not as fine as i wanted, fearing poor conversion i added 1kg of raw sugar i had. Stirred morning and night for the first 5 days then left it to do its thing for 6 weeks (i usually go 3 weeks but life got in the way).

Pulled the lid off yesterday and this stuff was PURPLE and smelled like grape bubblegum. Even had a slight taste to it but was dry / sour. There was no sign of infection.

Because of the nature of the he beast, real time conversion of starch at room temp it picks up infections easy. You could boil grain cool fast pitch, then ferment behind an airlock and stay sanitary and it will avoid the bacterial interference.
I have not tried this yet but will at some stage.

I have however gone to the other end of the scale and done open top fermentation. While nothing groundbreaking happened and minus the vinegar flies(run it asap after done) you still end up with a good drink.

Didnt get to run it, so will run it tomorrow and hoping to hold on to as much of the bubble gum flavour as possible. I actually kept 15L of wash for a 1.5 run.

Looking for opinions on whether to go 2, 3 or 4 plates or pot mode.

Wow that was an interesting run.

Everything off the still smelled like bubblegum, so i was very excited but it tasted like sugary cereal milk. Still very nice.

AND the tails were good, no wet dog or crap. Will keep it separate and see how it goes.

No idea what happened to the wash going purple but it is definitely desirable :happy-partydance:  :music-deathmetal:
