I managed to get my hands on a pullulanase enzyme that also contains alpha-amylase, cellulase and a couple more.

The manufacturer claims that it will convert nearly 100% of starches in unmalted barley. I'll try to get a batch down this week to see how it goes.

I got it from a mob in NSW who are the Aus distributor for a US pharmaceutical company. It's intended for commercial sale only, but they let me have some samples to run a few trials.

If I wanted to actually buy some, I'd have to get some prices and arrange a group buy.
