That sucks bs,

I have never done whiskey gens before but after once having a bad Rum ferment ,I always keep a spare bucket of Dunder ( Backset) . Not sure what percentage of backset you use but there is always some left over in Rum making .
It means that I only have to go back a gen if shit happens again

I do all my washes in a similar barrel after I've put a few scoops of napisan w/ water in it and rolled it around for 2 minutes...never had issues like this.

I always figured the alcohol content after 3 days fermentation would be enough to kill anything after that.

As a brewer I can tell you that your cleaning regime is totally inadequate. Nothing wrong with the napisan part for cleaning, but you need to sanitise. Sure your cuts will not get infected, but the was sure will. You are very lucky to not have any issues thus far. Go and get some Starsan, easy to use and you can reuse it plenty so it's quit cheap.

My last rum wash got pretty manky... I scooped most of the crud off the top, siphoned the wash into the boiler and added a bucket of boiling water to the lees... Killed the infection, and the yeast... Pitched new yeast with the new gen and we're all good!

My old man (home brews beer...) keeps trying to tell me that I've gotta sterilise everything... Dreamin'!

I had this same infection a couple weeks ago, strangely the wash was fine and i ran in. I tipped about 5 L of water on my grains and yeast and left overnight while waiting for backset to cool. I woke to this in the fermenter.
Am i right in thinking that it was from not running the wash quick enough (had it sitting around for a while)...and was probably lucky the wash had not got it firs?
