Well I would have to say that I've had my most successful mash so far
I have been using Jo White Pilsner malt because of availability and price
And I thought I had been doing ok
I mash along mountain moonshiner method but use some wheat as well
I've up scaled of late and decided to do the corn in a separate cooler to the wheat/rye due to space
Also picked up some golden promise malt aswell and the results

Both coolers have about 4 inches of pure sugar liquid on top
I'm guessing the golden promise really does have heaps more grunt :handgestures-thumbupleft:

GP is a yummy malt and makes an awesome APA. I'm only starting to get into this world, so will have to experiment. The only question do you use more as it has a lot less DP than Distillers Malt and Galaxy; or does your recipe still hit the magic DP >= 30 with it.

I just use the volumes on mt moonshiners recipe
Maybe next time I'll get some galaxy or distillers and compare

This could be an issue if using unmalted corn...

Golden Promise has about half the diastatic power of Pilsner malt. I think it's around DP 70, where your typical pilsner malt is about DP 120-140. From memory, don't they need about DP 35 to convert themselves?...so Golden Promise will probably only convert itself and its weight again of the base grain :think:

Maybe I read it wrong, I though the GP was converting the corn and the wheat/rye was in a separate vessel?

used gp to convert the mashes in both vessels
i thought the gp had more power than the pils malt but wouldn't be the first time i got it wrong lol :angry-banghead:
anyway i will chuck it all in the fermenter in an hour or two and take an sg and see how we went :D

In the values above, GP 120 beats Pils 110. But I was moreso comparing it to something like Galaxy at 348. I guess at the end of the day if you are getting decent conversion that's all that matters.

What's wrong with 1.055?? Some all-grain gurus I've spoken to reckon not to go over 1.050...but I go a bit higher. I wouldn't exceed an 8%abv potential on all-grain, which is 1.065ish.

You've just about nailed 7%abv potential there, I wouldn't be snarling at that. :naughty:

My bad on the GP, I thought it was heaps low on DP, must have been thinking of another grain.

Yer your right not to bad
But I can see allot of fine unconverted material in the wash
And just think there is wasted sugars there
I want to be able to hit the 1.080 mark every time as it's a huge effort to make this mash
Not dishearted tho as I'm happy with my mash procedure
And with more powerful malt I think I will shit it in
I'm definitely thinking about using malted rye Instead of I unmalted meal in the future
But will try to get some bb galaxy first an see how that goes :handgestures-thumbupleft:

it's my 1st choice goto malt for DP grunt... and a fairly good low flavour /EBC

It also stores well in air tight containers, so no probs with a larger order.

How closely are you following the Mountain Moonshine recipe?

"Take 50 pounds of cracked corn and cook it up with 40 gallons of water for an hour. Let it cool down to 140 degrees and add 15 pounds of ground up malted barley."

Putting that into BeerSmith gives me 1.078 at 100% efficiency. I would not expect 100% eff, that's the pure lab world. 75%-85% is where I'm happy, but in my beer world where I have a lot of experience.
70% = 1.055 <- your number
75% = 1.059
80% = 1.063
85% = 1.067
Even at 85% eff (which is very good on a home scale) you still need 4kg white sugar to get to 1.080. Your 70% efficiency is a good number, a lot of brewers brew there and are happy. It's generally accepted the higher the target gravity the lower the efficiency.

If you want a higher gravity you could tweak the mash a bit. I'm still learning corn conversion so cannot offer help at the moment. Do you measure the mash pH? Did you do a starch test? The other thing you can do is possibly get some more corn/malt in there without any extra water.

I'm not sure on how far this will ferment out to give a final alcohol as I've got my first batch (not from this recipe, that other one you gave me ideas about conversion) fermenting now.

Also http://www.bulkbrewingsupplies.com.au/ (no affiliation) is about the best prices I know off for grain. He has Galaxy in stock on his notice board but not on the prices page. $44 for a 25kg bag of BB. I wish I could get those prices over here. Uncrushed the grain will store for a couple of years.

I'm aiming for a hundred lt of wash above the grain bed to suit my boiler
I'm finding about 160 lt total wash gets me this as I don't strain wash from the grains but use this in my next gen
I've kept total grain bill similar to mt moons recipe but have tweeked to my volume and taste(wheat)
I also use Alfa from hbs to thin the mash at 72deg and chuck in beano at pitching temp with the malt going in at 65 deg
My coolers keep mash temps at 60 deg over night
doing corn Ina separate vessel to the wheat/rye just has allowed me more volume(60lt n 40lt vessels)but have noticed rye is harder to convert and I could be doing better withe corn as well
I'm now sure more powerful malt will get me to where I wanna be (1.080)

I'm getting close to where I want to be so will do a recipe write up when I'm happy :handgestures-thumbupleft:

also my ph of mash water is 6 but didn't do ph of mash
this was with no backset as its first gen but gen 2 will get tested
starch test was negative with the clear liquids but as you can see from photo below this level there is still plenty of starches
i figure with better malt ill get better conversion and will get better results with less grains used because the amount of left over grains seems wasteful to me
next time i will use some gypsum to harden my water for the mashing as well
any way I'm loving all this journey and experimenting in my pursuit of bourbon :handgestures-thumbupleft:

It's a little bit less, but not that much different.
Average values
BB Galaxy 298
BB Pale 275

They are getting rid of the Galaxy from the line up, due to extremely tight tolerances on the product. They will be releasing an alternative which is great for adjuncts (such as corn) in the future but I don't know when.
