Wondering with the sort of mash we aim for would it benifit to use the alpha amylase in the grain up by first step at 68-69c to chop the long strain "starch's"? Up. Then lower the temp with some cold water then add beta amalyse extract (the stuff in the grain will denature with the higher temp step) and then mash at lower 63 for couple hours? Will it make a considerable difference in yield over a single step mash?

I was reading the with beer mashing for longer timeframe at 63 will lead to a drier more completly fermented beer than mashing at 65. But not sure if this means higher yield.
Or should i stick to single step mash at 65?

If adding enzyme and using raw grain the enzyme may have a higher optimal temperature range then malted grain enzyme .

Its malted grain but thinking if I do a higher alpha rest it will denature the beta which I would have to re add?

If you want full conversion amyloglucosidase is used

WLN4100 Ultra-Ferm is one type

AMG (also known as amyloglucosidase or glucoamylase) is an enzyme which removes glucose units from liquefied starch in a stepwise manner, producing glucose. AMG is obtained from a selected strain of the fungus Aspergillus niger. AMG is used in the production of glucose syrups from starch or dextrins.

An old post I know but did anyone ever find an Aussie supplier for the Easymash products.

I looked around and couldn’t find anyone that was going to supply small quantities.

I ended up just ordering from overseas and getting it shipped here.

Thanks mate. I didn't realize how little I needed. I bought the 4 oz kit cost $65 au shipped so not too bad. what recipe did you use.

Im still waiting on a few things for my mash tun. Im going to build a sparge arm but im looking at trying 100% Corn and also some wheat vodkas.

There’s a company in Melbourne that produces Delta malt. I buy it from ibrew here for $9.95 100ml. Cheap and very good.
