What differenciates malts

Wondering what the difference is between malts? Is it the way it's roasted that makes the difference ie pilsner/ale/ caramalt or is it physically different strains of barley?

Different types of barley will determine the base malt.

Then additional kilning and roasting etc will determine what it ends up as :handgestures-thumbupleft:

Gladfield detail information about their different malts here and talk about the base grain and how it is modified. Makes for a good starting point in differentiating the different types of malt.
