Now have 60l of all grain bourbon working away No malt just Hi-Temp liquid enzymes. all mashed in Robobrew

You say higher temps for maize so do you do a beta then an alpha rest? Care to share temps :D
I have corn wheat barley all unmalted and plan to do same thing mash them.all seperate then blend for diff drinks :handgestures-thumbupleft:

equipment: 2" pot with 2" shotty 400mm long 5x 1/2" on a t500 boiler.
50l keg boiler 4" still mount 4" sight glass 1" drain..
4 plate 4" bubbler, 600mm packed section

Maize at 89C for 90 mins with Alpha (HTL). then drop to 58C for 60 mins with GL ( pH adjustment down )

Other grains 66 for 60 mins with Alpha (HTL) then down to 58C with GL and TL

Sorry I have assumed familiarity with Hi Temp enzymes. If anyone has problems with my shorthand ask and I will detail my procedure in more detail.

I assumed alpha htl is high temp alpha and 58 gl is glucoamalyse?
Have you only played with high temp alpha.
Have seen couple posts where step mash vastly improved conversion :handgestures-thumbupleft: I am getting some of the enzyme with rc al looking forward to trying it myself , getting alpha beta and glucoamylse. :handgestures-thumbupleft:
