Which molasses for rum wash?

Postby Yourmomm » Thu Aug 17, 2017 12:27 pm

OK, I've read literally hundreds of posts on this, but still confused.

So most people say feedgrade molasses is fine for rum wash, but a lot of those same people say unsulphured molasses is essential. Here in NZ, the only feedgrade molasses I can source, ALL has sulphur in it... The only molasses available without sulphur is the ridiculously expensive organic, health food shop variety, and I don't fancy buying 250kg of that!

Feedgrade molasses comes with a sulphur content of 3-4g/kg, which sounds like a lot to me.

Can anyone tell me, is sulphured molasses actually ok to make a rum wash with?

Thanks in advance...

Buy small amount first say 3l add that to 3kg sugar top up to 30l see if it ferments. :handgestures-thumbupleft: if it does buy bulk

Mostly mine finish at 1.010. Ferment it nice and warm between 30-40. :handgestures-thumbupleft:

Most feed grade will do, just make sure it's thick like treacle I know there's one stockfeed supplies store water it down and add sulfites.
Make sure they fill your container as lots seem to use old pesticide containers and other questionable containers.
The small amount first is a good safe tactic.

A food wholesaler should be able to supply bundaberg foodgrade molasses i would think even in NZ. I got mine from PFD (i think). Was $20 for 14kg. If you know someone who runs a bakery or kitchen or something they should be able to hook you up.

If they let you have a taste it should be sweet with a licorice hit to it :handgestures-thumbupleft:

And yeah if it ferments then good to go ;-)

The amount of sulphur you quoted in the molasses would be at dangerous levels even for stock.
Would it be possible to get a photo... To confirm what form it is in.

On a slightly different though related topic on sulphur... You will find that an all grain mash can naturally have anywhere between 0.5 and 40 ppm sulphur. (Depends on the grain). During fermentation a lot of it will be blown off and any left will be taken care of by the copper in the still.
I am raising this becausevthere seems to be too much concern when talking/dealing with small amount of sulphur in the end to end process.

3-4g / kg sounds incredible to me.... Maybe I am missing something.

Just to put above in perspective. If I want 30ppm of Sulphur in a 20 litre wash I would add 1.2 grams of Potassium metabisulfite.

Yea 3-4g/ kg does seem excessive i doubt it would ferment.

I was up in Northland a few months back and read a article in the Advocate about some people who are starting to grow sugarcane, Ill be back over in March, I might stop in and have a chat to them. A fresh sugarcane juice Rum would be awesome, especially seeing as it not easy to find Molasses. Thinking of heading back to NZ soon, need to sort out suppliers etc so I can hit the ground running.
