Leftover in fermenter ?

Been wondering about the fluid left behind in fermenter when sour mashing. Guessing this will behave the same as backset in "souring" the mash? I mean the sludge left when draining fermenter. In my 200l drum i leave about 25l sludge/liquid + grain bed when fully drained. Guessing this will affect ph without adding more from out of boiler.. :-B

You mean the lees?? Should be fairly neutral, slightly acidic I suppose. It's just beer, on the grain, right?

In a perfect world you woukd drain it all off, separate the good yeast and pitch it back in to gen 2. I reality, i throw half of it away and pour the new ingredients on top. The ph will be the same as the wash was. Its mostly dead yeast. Great for the compost bin
