Starch in solution measurement?

Postby bluc » Thu Nov 02, 2017 5:14 pm

Besides using iodine is there anyway to measure starch in solution? How do you know when max starch is reached(corn gelatinization for example)?

well there are some strips you can buy but iodine is more accurate, what's the issue with iodine.

You could get a starch assay kit, but I think they are pretty pricey. Are you looking at it to gauge how much starch isn't converting or how much starch you have to begin with? If it is the latter, then the kit is the way to go.. If you are just looking at what is left, then iodine is definitely the more cost effective way.

iodine tells you there is starch. I was thinking more of reading "how much" starch. Like a hydrometer tells you how much sugar..

your corn may be gelatinous but maybe only half is? instead of full starch in solution?

Well the starch assay kit will tell you how much starch is present. You could shop around different lab supply joints. Might even find something on ebay. :handgestures-thumbupleft:

OK I'll bite, why? Are you wanting some starch left for some reason otherwise ya keep mashing til it goes from yellow to murky yellow. If there is just a bit of starch it will be reddy brown to a hint of purple and if ya dun fookedoop then it will be a solid purple almost black .

No don't want any starch left. In fact I want it ALL converted. Ok had no idea that it went different colours depending on amounts. so if all starch is done it will be black? I guess I was looking more for a gravity type reading to be sure I had hit a target volume of starch release.. if all starch from x amount of corn has been gelatinised x happens..Then you know your good to go and add the malt..

No if there is no starch it will be murky yellow that is it will be the least change from the original mash colour.
