Mouldy rum wash?

Postby Fishleg » Sat Jan 06, 2018 11:09 am

Got about 60l of rum wash that's been left In a 220l barrel for a couple of months, the rest I've already stripped and spirit run. Went to fill the boiler to strip the rest, opened the lid and there's a layer of greenish mouldy bubbly shit on there. Doesn't smell bad, should I just run it anyway?

Here is a pic. I put my head right in and had a good smell, there is a slight acidic tang to it. I've been doing rum for almost a year now I have had one wash get a similar smell to it which I ran anyway and it turned out ok, but have never had this happen.
I'm leaning toward just running it and see what happens, but thought I'd ask some more experienced people just in case.

Could be advanved lacto infection but thats a big maybe. Lacto is normally white. I wouldnt taste the wash but maybe run it and see  rush runs a dunder pit and may be of more help. Maybe flick him a pm..

Have a look at these see if any colours match then follow the link. https://www.google.com.au/search?q=dunder+pit+green+mould&client=ms-android-optus-au&prmd=sivn&source=lnms&tbm=isch&sa=X&ved=0ahUKEwjriJmwx8LYAhWBQJQKHWEFCTgQ_AUIEigC&biw=412&bih=766 could be same mould used in blue cheese but I am just grasping at straws.

Just run it. Even if it is a nasty infection how can it survive? First you boil the piss out of it, then it's going to come out at like 70%abv.
I'd say it may be the best rum you've ever made. Long ferments let acids and ethanols get their jiggy on, creating esters that make it taste yummy :handgestures-thumbupleft:

Two maybes, that's all I need. running as I type this. Should get 2x30/35l strips out of it. If it seems alright I've got about half a keg of feints there, I might stick it with that for spirit run

Some nice earthy smells coming from my still right now.

Wonder if the dunder from this mouldy wash might be worth starting a mini dunder pit with?

Even though the bacteria would be dead, would there not be some of the flavours originally formed still left?

Flavours are from the bacteria interacting with boiling alcohol not the fermentation process..
