so I just realised I've made a rum wash (just molasses, no sugar) and I've used citric acid instead of Epsom salts... was this a fubar?

It's goin off it's head better then any rum i've done so far so im hoping it'll be fine
 :text-imwithstupid:

would Epsom salts really make that much difference to the alcohol content?...
glad it's only first 1st gen then

Can just melt sugar and add it now or invert the sugar let it cool than add it. It will ferment to desired gravity then..

assuming what I've read is right... I've gone with 9 kgs of molasses ( apparently = to 750grams sugar per kg) so I should be around 7ish kgs for a 25l wash.

1/4 teaspoon citric acid.

Ok I assumed you were doing 50/50 sugar mollases.
You have plenty sugar maybe bit to much I normally aim for 4kg per 30l 6l molasses. But all good. Dont think the citric will do much harm. Just add the epsom on top some extra nutrient wont hurt.. and see how it goes..

thanks bluc i think I'll just leave it go...
like I said this is the best ferment I've had yet... it's the only ferment I've had come through the air lock

If'n you reckon there's 750grams sugar in a kg of molasses (sounds high to me) that makes your wash @ 270g/L. Well below the 350 gram threshold of normal yeast (for sucrose).
That's if you added the the molasses to 25 liters and not water to the molasses up to 25 liters on the fermenter.
I used buccaneer bobs recipe before and it adds sugar later on to stagger the white sugar addition but you need to watch for foam up.
Epsom salts just adds minerals that people reckon are lacking in the molasses. Doesn't increase alc content.
I used to use a cup full of molasses for the nutrients in my big stacked turbos (one pack turbo in 120+ liter batches) I did before I got edumicated and they seemed to work fine even with the sugar g/L near maximum. There is tonnes of goodies in molasses for hungry yeast.
