Anybody know of any gin makers in Melbourne who would help in developing a gin recipe?

There's plenty of commercial gin distilleries in and around Melbourne mate, you'd be better of contacting one of them. This is a forum for hobbyists.

Can I ask why you want others to make it for you rather than you making it yourself ?
We don’t “produce” for others, it’s a hobby not a business

Best bet as stated is to contact a small craft distillery. If you have enough money to make it worth their while I'd say they would help

If you read his post, he wasn't asking for anyone to make it for him, he was asking for help to develop a recipe. Either way, there's plenty of recipes here to try...

Hi, thanks for all the comments.

The context for the request is that I am setting a distillery in the Phillipines but wanted to experiment on the recipe here in Melbourne. In particular I was looking to learn from others, hence the professional or hobbyists.

As ultimately I will be investing in equipment in the Phillipines I wanted to work with someone and their equipment in Melbourne.

The key is I don’t want someone to do this for me, rather as someone very new to this space I wanted to work with and learn from those more experienced.

Hope this clarifies. I will definitely reach out to some of the craft operations but if there are any other suggestions I am keen to hear.

Thanks, unfortunately I’m based in Melbourne but have tried the masterclass at Bass and Flinders.
While that’s a good start, it doesn’t give you a real chance to experiment properly.

Your only legal option is to find a craft distillery that is willing to work with you, probably at a cost.
And kudos to you for coming back and explaining your situation.
Why not invest a little and set yourself up in Melbourne ?

Can be done legally himself, just have to pay $20 a litre as a hobbyist..... might be restricted on boiler size though?
A 5l setup would be fine for recipe development (all I've got)
Not sure many places would be up to share their knowledge either

Had a look at their taxes on booze, a little convoluted, if you're making rum or similar from native plants, 18c per litre of 50%, half that if you put out under 100l a day (possibly to support the little guys/farmers?). If it's anything else and retails for more than $16ish /750ml then it's $8.80 /50%litre. , so 2/3 our tax rates unless it's rum...

Rum sounds like a better idea over there, barrels would be the biggest issue

5L is legal only to distill water and essential oils. The licencing requirements for distillation of ethanol are far more involved that are really not viable for hobbyists. The real killer is the premises (can't be a residence) and the need to demonstrate security and safety at those premises. So if someone was to go down that path they'd need to commit to it completely (unless they just happen to own some spare warehouse/commercial property).

If melb_andy was going to legally distill in Australia it would only make sense to do so with serious upfront investment.

It's an interview with the owners of Anther Spirits, small batch gin producers who operate out of a place called The Craft & Co in Collingwood. From what I can tell, that place is exactly what you are looking for.
