EC1118

Hi All,

I’m just curious as to everyone’s experience with EC1118? Typically I use bakers yeast and brew in TFFV and McRib and UJSSM in 220 litre olive drums.

I’ll be the first to admin my run is terrible but the neutral and ujssm are bloody gold.

Would I benefit to switching yeasts in my neutral or ujssm ? I’ll be honest I’m going to give buccaneer bobs recipe a crack next and if not I’m going to cut away rum forever.

Next thing is I live in Darwin it’s Hot AF up here and another thing is the cost. $6 for 5 grams. I was going to add two packets in a starter and give the ujssm a go. At least that way I uld use it over multiple gens??

Worthwhile or stick with bakers yeast?

Only used it once with a grape concentrate merlot wine for some brandy. Fermented dry in 10days no issues taste well still waiting. But I am sure will be fine..was in fairly hot weather also fermenter in tin shed no cooling..

My main concern is will it provide significant benefits when compared to bakers yeast for neutral and ujssm?

I use it with TPW wash and it makes a good clean neutral for me. Best way would be to just buy a 5g bag and test it.

I wouldn't use ec1118 in a whiskey, stick with bakers or try a whiskey yeast. As for tpw ec1118 will be fine, that's what I use for my neutrals. From what I hear it ferments out better and finishes to a dry mouth feel. They say it will handle higher % of sugar in washes too.

I have been using the 5 star supplied Safgold yeast. It has been over 35 deg here for my last 4 ferments and it has been finishing off my all grain whisky 1.000. I think it is very good at high temp.

I use "safspirit malt" for barley and "safspirit american whiskey" for corn/barley.. :D

Have found the american goes slightly drier than the malt 1 vs .1010 often..

I use American Safspirit yeast for corn and rye. Safmalt for barley whisky.
The EC1118 makes a bloody good neutral. Previous attempts for neutral using bakers yeast was not so great - okay, but not great.

Last night I was tasting a 2 year old bourbon made with bakers yeast - it took a while come good, but it got there.
