Storing backset

Good morning guys
I understand how important generations and backset are with many flavours not really coming through until the fourth or fifth generation. I understand what needs to happen if stripping a wash and using the backset straight away.
I am a little confused though when people rack their wash for a couple of days or change fermenting wash. Is it ok to store the hot backset in an airtight container and not use it for a few weeks or even a month.
What about the lees can these be stored the same way or are the lees not as important for the flavour profile.

I've just been putting it in the freezer in 5ltr icecream containers which seems to work well.
Id imagine it would store in an airtight container for a fair while too. I would prob make sure its full to the brim when sealing so there is no room for air and hopefully no nasties should grow.
Put the backset in hot and it sanitizes the container too.
I've actually got 2 5ltr containers just sitting in the fridge atm as the freezer is getting full and they look fine after at least 5-6 weeks, could be more. :handgestures-thumbupleft:

I have some 20 litre containers around and I filled one yesterday because backset was so hot, will pour it on the garden when second generation is done so I always have a fall back position. No room to freeze button looking at a week or two option If I want to try a different wash.

Backset has a lower freezing temperature then water so is good for using as ice blocks .

Hmmmm
Have you tried using these ice blocks in your finished product, or have I been doing too much tasting lol

Have you tried using these ice blocks in your finished product, or have I been doing too much tasting lol

Blocks to keep things cold not ice cubes that you put in drinks .
