I understand how important generations and backset are with many flavours not really coming through until the fourth or fifth generation. I understand what needs to happen if stripping a wash and using the backset straight away.
I am a little confused though when people rack their wash for a couple of days or change fermenting wash. Is it ok to store the hot backset in an airtight container and not use it for a few weeks or even a month.
What about the lees can these be stored the same way or are the lees not as important for the flavour profile.
