Cornflake whiskey

Postby Roddersvb » Fri Aug 19, 2022 10:20 am

Hi all,
I’m planning a future Zak’s cornflake whiskey, his recipe is for 40-45L, I have 23L fermentor, is it as simple as scaling the recipe to suit?
380g cornflakes
4kg sugar
2.5 Tbsp yeast
Juice 1 lemon
Or have I missed something?
I’d rather learn from someone else’s mistake than make my own :laughing-rolling:

it's up to you with the corn flakes, some people have upped their amount considerably.
there's another cornflake whiskey recipe floating around (Odin) so i arrived at these amounts.....
1 kg cornflakes
1 x 250gm box of original ryvita
3.5kg sugar (i will probably use 4kg next time)
18 l water
5l backset
50gms lowans bakers yeast (sometimes yellow angel)
pinch of epsom
enough citric acid to bring PH down to 5.8-6.0
ie don't just put put recipe amounts of acid in, test your water first (esp if using acidic backset)
i still have some on oak in glass that's 15 months old.
the one with 5star french dominoes is luverly.

I can vouch for Odins recipe. I made some awesome cinnamon likker with that. I made up 2x20L ferments and stripped one then added them both in for a slow pot stilled spirit run.

Edit:
I didn't use backset.

Cheers

Hey Rumble,
So you stripped one then added both for a slow spirit run? Or stripped both?
I’ve got a FFV going now and planning a cornflake brew next (got some cracked corn for the chooks) just wondering about the best method!
Cheers

maybe using cracked corn as opposed to cornflakes requires a different approach

The great thing with cornflake whiskey is you get a nice toasty cornflake flavour coming across. With regular cracked corn you'll get something more like UJSSM - still nice but more of a fresh, dried corn flavour.

UJSSM I find also needs at least a couple of generations to really get the corn flavour across, cornflakes work from the first gen - and it's not really worth trying to do 'generations' with CFW.

I suggest corn even just cracked corn will get a far better outcome. I just sniffed my cornflakes and nowhere near the corn, i mean 1/100 of the smell and taste will follow.

Time will tell, distill it in two weeks time.

Ahhhh it looks like I confused the question 8-}
Rumble says 2 fermenters, strip 1 and add both for slow spirit run, did I get that right?

Separate question,
How do you slow a pot still? I ran it over the weekend and no matter how much or little water flow the distillate flow didn’t change.
Thanks heaps for all the comments, some really good info there :handgestures-thumbupleft:

Maybe try roasting the cracked corn, it's a tenth the price of brand name corn flakes

You can also buy steam flaked corn some places, can't say I noticed a difference using it vs cracked

Whats left in the boiler after you remove the alcohol..
If you run a turbo 500 you wont get the benifit of a whiskey unless you have a pot head..

Ok so my Chupa chup arrived yesterday and I love the personal touch of throwing in a controller :laughing-rolling:
I have a pot head bluc, so I can’t wait for the CFW to stop bubbling, bring on the whisky.
I did a re-run of some gin the other day and left the cinnamon quills in by accident, the backset smells amazing so I might save some fo a spiced rum?

Making this exact recipe as we speak although I went with 6ltr backset from a turbo 500 run that's still hot ... By accident and 4kg sugar

Doing stripping runs on CFWs today, the wash smells delicious a bit like apples!
Going to do 2nd gen on the 2 fermentors.
Just gotta day the trub looks a bit like something I’ve thrown up!
Anyways with the new controller the spirit run will be interesting

Calculator indicates 9.03%.

You could let it go longer if you want to squeeze a bit more out but you could run it now. It's a trade off of how much more you will get out of it v how much longer you want to wait.

How does it taste ? If there is no sweetness then run it.

Stripped it through alembic dome this morning , smells like corn but flavour pretty similar to neutral spirit but obviously not a spirit run . Got a second generation in fermenter now so plus another batch in another fermenter so looking forward to bottling it up on oak further down track :handgestures-thumbupleft:

Stripped it down to 20% and kept that seperate although tempted to throw that in with the 50%abv as smells pretty damn good

Or best practice to keep aside for feints runs?
