Mac rum recipe aged 18 months at 60%

Hey all
Did a Mac rum run about 18 months ago had it on oak at 60% in pantry
Pulled it out and watered down to 38% with filtered rain water then filtered through paper towel as was a bit cloudy

48 hours later it is a bit like something is growing in there really don’t want to throw it as I have been patiently waiting for ages but worried it’s some type of bacterial thing seems to mix in when shaken ….??

Nothing grows in 60% alcohol. Did you go deep into tails? What sort of paper towel was used?

I have vague memories of reading about "clouds" in vodka in here. Looks similar. Some kind of a louche I believe.(fussel oils from tails falling out of suspension when mixed with water). Be interested to hear other peoples thoughts.

    Yeah I didn’t think anything would grow in 60% alcohol was normal paper towel tastes fine real fine and was clear for 24 hours after diluting was regular kitchen paper viva brand
    Will try coffee filters next

    Was hearts only I’m not greedy and only take the middle well as far as I’m aware

    I have about 45 litres too do it’s second run on very soon if I ever get some spare time just don’t want it to be wasted

    Does it look thick and gelatinous. How would it go being run through a strainer ?

    Sucks that you have been aging it for 18 months for this to happen.

    Filter through coffee filters and it improved a lot then filled my empty stainless charcoal filter with white filter media and strained it for a few hours she now looking mint and 1 bottle down it’s a really nice drop
    Forgot to mention previously it had sat on vanilla beans and currents the whole 18 months

    Thanks for the advice guys glad I didn’t throw it out and start again

    How did the currents go did they get ott? I have done sultanas but only left in week or so. Sultanna and chilli is delicious in rum. I used a fairly mild chilli a cayene but had enough bite for me.. :handgestures-thumbupleft:
