Help understanding backset

I found this YouTube video that has helped me get my head around the whole dunder / backset thing I’d like to get other people’s opinions on it

I think I’ve enjoyed every one of his videos as he explains it all very technically but very simply…

I’ve taken what he explains and then put it into practice, which is where the real learning takes place. Take heaps of your own notes and tweak if you don’t like the output.

I’ve been able to get a few things sorted out watching this video and I always take notes and I just may be now on the right track, previously was adding to the fermentation at the start and it wasn’t a pleasant experience now adding to the spirit run now the ferment is a lot happier and preliminary taste is better ageing will hopefully add some more flavour
