Whole corn

Postby B-Man » Tue Mar 14, 2023 5:56 am

I was planning on doing a corn mash with the yellow angel yeast and ordered in some cracked maize.
I just assumed it was what I was after and only realised when pouring it in the supplied me with whole corn.
Is the angel yeast going to work? Or do I have to turn it into a ujssm and add sugar?

Wont do much in a short time of one ferment, when emptying leave behind grain / yeast in fermenter, top up and go again it might improve as time passes. Do not leave it exposed simply cover with clean water and reseal between batches. That's my thoughts. Cracked worked better in this scenario in my tests.

It doesn't look like it's doing anything temp is just dropping.
I'll add some sugar and see what it does. Will I need to add nutrients?

If angel is working there will be a thick cap on top of grain..

I have no experience with angel yellow label, but isn't there a need to gelatinise the corn?

No , that’s what Angel yeast is all about , no cooking required

added some sugar and it started fermenting.
This angel yeast goes alot harder than lowan bread yeast. ended up doing 20kg of sugar in 125L water. if this finished out lower than the TFFV I do at .992 then its faster than the TFFV and will give me more abv.

Ok, I remember the premise. Maybe it's just the fact that water has difficulty accessing the starch in a whole corn kernel, so that magic fairy dust in the yeast can't go to work???
