sweet cuts

Just starting out and need some advise? then post it in here.

sweet cuts

i tried to do a search and couldn't find a relevant thread. can anyone point me to a thread that explains why some of my heart cuts from the spirit run of my dark brown sugar/sultana wash were slightly sweet? i can only assume it's some compound with a structure that fits the taste receptors usually used for sugars :?:

were these sweet cuts the first to come off the still, the middle, last or random thru the whole run?

kimbo: this was pretty much in the middle of the run. i started sampling my cuts from close to the middle which was sweet, worked my way towards the heads with the sweetness disappearing as the flavour got stronger. when i went back the other way, from the centre working toward the tail it was a similar story. all samples were diluted to 40% for tasting.
