wash percentage

Just starting out and need some advise? then post it in here.

wash percentage

I'm reading a book on origin of spirits and such.

" as the yeast continue to digest the carbs, the amount of alcohol in the liquid stedily rises. when the alcohol concentration reaches 3 percent, the still master transfers the liquid - now known as distillers beer - from the fermentation tank into the still for the main event: distillation"

do they only ferment out to 3%?

Yeh 3% for most washes would be a little low.

However AG would be typically under 10% closer to 8 in real terms.

Sugar heads well that's another story a good 15% plus is more than easily achieved with good yeast work, pH and precise temp control on a dedicated yeast.

From memory Jack Daniels distillers beer is 6% once fermented.
