help with 2nd gen rum first attempt

just a question I will be trying my first gen 2 rum tonight, I will have 9.6 litres of backset 3k of sugar and 3l of molasses is this correct? also on after I finish my last run I will be left with about 5 litres of the first wash but I don't wanna do another run as it will go into the lees so is leaving 5 litres at the bottom for slops fine? thank you

30 litres, but I filled it to 25 litres via your recipe :)

Cut back on the dunder, as a general rule 20% dunder to to wash volume.

You could also add an extra kg of sugar or molasses to up the yield a bit, if you like a really bold rum add the extra molasses ;-)

ok so assuming I know my math that would be 5 litres of dunder to 25 litres and I bought another 3kg of sugar and I haven't got the molasses yet though, so how much sugar and molasses do I actually need to add back to the wash for gen 2? the same as the first time ?

The original recipe is just a guide mate, you can tweak it to your liking a fair bit ;-)

5 litres dunder, 3kg sugar & 3kg molasses will give you a nice rum, each gen uses the same qty as the one before :handgestures-thumbupleft:

So I understand by adding more sugar you get a higher yield, but what is the down side? Does it change the taste or quality at all?

1 kg extra wont change it at all, just ups the yield a bit ;-)

it's only when you start pushing a wash for high ABV you get off flavours, but with this wash being around 10% you can play around a bit.

Try changing the sugar/molasses ratios a bit to suit your palate ;-)

if it doesn't fire up, after say I will give it 6 hours should I pitch more yeast to start gen 2? thank you

give it 24 and then i'd think about re-pitching, but i doubt it will take that long if you are adding to an existing yeast bed that's only had a few days since it was last working. :handgestures-thumbupleft:

thanks for the replies, so day 4 and its down to 1 bubble every 50 seconds lol nearly done smell I dunno sweeter then first gen so should be yum :)
