Building up Generations.

Postby adam89 » Thu Aug 01, 2013 7:35 pm

So I was thinking,

At the moment I am using 60L fermenters to build up generations of Rum and BWKO. This is quite a large volume each time to get mild tasting spirits until I hit the generation I like.

Can you use the likes of a 20L fermenter, build your generations up, then use the backset on a larger fermentation vessel? Even if you hit 5 Generations with the 20L fermenter, used the backset to make up a 60L ferment then used that backset on a 200L ferment. Does anyone do it this way?

Cheers,
Adam.

Yeah mate, you can do that no worries. It is a good way to build up to a 200L wash with out needing heaps of yeast.

That is a great idea Adam. I strip 50litre washes doing the same thing.
The generations from 4+ are great and stripping 25litre washes would save a bit on ingredients and stuff to get the desired flavor.
But then again freezing backset and adjusting ph is a lot less work I suppose.

Bloke,

I use small ferments for cleaners, testers etc.

The backset or dunder (I'm not a rum bloke) can be reused. The key here is to find the gen that you taste prefer and store it.

Mate store stores gen3 for dunder as he sees that as best taste wise and uses that for new ferments up to gen 6 ish for rums.
