Hello bourbon,

Generally strip runs are done flat out or near enough to flat out. it's just a first separation for the spirit run later. Turn your cooling on so spirit temp is around the 20c mark, if it's higher its not really a concern for the spirit but your alco meter will false read and you need to allow for that. Strip down to 20 abv, call it quits.
