keeping generations alive

Postby philthy » Mon Oct 14, 2013 8:51 pm

gday felas,

just curious the way you guys utilize your fermenters through out the gens. Im up to my 4th and have continuously used the same fermenters. ive just been scooping off the spent corn and topping it up with backset, sugar, corn....
What im wondering is, should i have a clean fermenter to replace the one i just used? ie tip lees into clean fermenter and go from there for the next gen or keep on goen with the same?

Thanks
philthy

LOL good question philthy

I so far only do Rums but was only just thinking the same. You get lots of scum and shit building up and just seems to me to be an infection time-bomb.I've had sudden bad shit happen after around 5 rum gens

Just keep usin the same fermenter mate. I might have year old corn in some of mine. Once in a while i take out a shitload and add fresh yeast but the base is the same. Never had an infection cept in me beers.

yep,

run up to 8 gens replacing a good 15% grains do wipe out and tidy up fermenter with no rinse steriliser. Stop at 8 cos backset tends to dominate taste and it gets manky/flat/tailsy smelling around the 10 gen mark for mine.
