Rum failed to relaunch.

10 days ago now I run my 3rd gen of MacRum same as always. 60 liter wash 16 liters of backset. SG was about 1.14 as always PH was 4.5. first 2 days no activity at all so I hit it with the stick mixer again and put in a pinch of Epsom salts and about 80gm of bakers yeast and turned the heater belt on to 30 c. Then went away for 10 days come back the wash tastes very bitter ( not sweet anyway) but gravity is still the same. Hydrometer is tested ok.

Why did my wash not fire and should I run it anyway to keep my gens going. I'm a bit worried it will do it again.

I'm presuming you added a little water after removing the wash from fermenter, and allowed backsets to cool. I had one the other week not want to fire up. After 2 days I added 3 good pinches of DAP and gave really good stir, next day it was away again. I saw somewhere in macRums recipe (I think) that not to worry about gravity due to unfermentables.stick your finger in the beer, if it's sticky it's not done yet. As for whether to run it or not I wouldn't have foggiest. That's one for the gurus :-B
Side note. My gen 3 MacWhiskey ran Thursday arvo was very slow fire up again but I put it down to the rain Thursday night and yesterday

Well it's not that then.

You didnt happen to tip the hot dunder back on the lees did you ?

No I let it sit over night as I always have was about 26 c when I tipped the dunder in. I've put some DAP in so I'll see how it goes.

Its really got me buggered it still hasn't fired with the DAP I put in. I've double checked everything and all seems perfect. I would have thought with an infection there would be some growth on top. I have some low wines from my last run as I just done a strip run due to time restrictions do you think I should put that in the still with what is in my fermenter and run that then use the sender for the next gen.

You said your sg was 1.14 ......thats extremely high.My hydrometer only reads up to 1.120 so I wonder if that wa a typo.
Anyway if it was that high then thats a real strain on any yeast.
You did say the wash was now bitter so maybe it has fermented out but because your hydro reading was so high, didn't get a correct reading.??

Watch dunder. It gets thicker and thicker with each succsessive gen causing a continual rise in sg

I think you should less dunder .

Now use 50l Keg with Pot head for Rum and Neutral stripping runs on gas .
LM/VM head with 1m packed 2" on Still Spirits boiler for Neutrals.
