Hi I have 15 liters of BWKO that has been sitting for 15 months now at 65% on various degrees of char that I obviously didn't monitor closely enough and is now has far too much oak flavor.
What do I do with it is there a good way that will save the time already spent aging or am I back to the beginning.
The way I see it is my options are.
Add some nuteral spirit to dilute the oak.
Rerun it through the bubbler and age again.
Add some unaged BWKO and age.
Add to a BWKO wash boiler charge rerun and age.
Any suggestions or input would be greatly appreciated.
