About to dump first water fill & refill with warm water until I get me some sherry (port?) tomorrow. Even though there's no leaks now. Planning to fill with MacWhisky after the sherry seasoning. Will be ordering more from this bloke, great quality.
Can get him on email : qldcooper@live.com.au
Or just search oak barrels on eBay, or seller name "cooper creations "

How long do you do the sherry seasoning for?

Also would it help to put a oil heater beside barrel every second day to trick the summer/winter seasons now it's starting to get a bit nippy?? :handgestures-thumbupleft:

Dunno, never done it before. Will probably check after a few days, empty & refill with the same stuff then keep checking regularly.

Wondering about adding french oak into my barrel. I think i like a combo of french and american better than straight american/french. Any ideas how much to add? Thinking 4-6g/l. I usally go 50/50 but no idea what g/l a 10l barrel would be equal to. I dont wanna add to much and end up with oak soup. Other option is two stage aging.
Take it out of keg after x amount of time and wack it in demijohn with french oak..then buy a french barrel when i can.
I asked about a 50/50 oak french american barrel with alternating staves. Best he can do is used, french port barrel staves, re surfaced and made into ends.. which is something i may consider.. thoughts

Go the two stage aging. Too easy to over do it if you put more wood in the barrel. The reconditioned French port barrel sounds good. May have to get me one of those too :handgestures-thumbupleft:

He could make a full barrel from the French though if you wanted, couldn't he?

Great reading bluc, do you think you could replicate the ageing by just adding a heap of dominoes and ageing in glass?
I'm guessing this is your single gen rum you are ageing?

Yea single gen.

Be hard to replicate in glass because there is a lot of interaction with air maybe just paper towel over the top would work?
I have not lost much abv but i reakon i have lost about 2.5l volume over 26l since 10/02 we had an unusually hot and dry summer though.

Hey Bluc...I add 6 - 7 grams of med french dominoe to my 10L barrels. Its a freakin good addition to the Whiskey. ( You doing Whiskey)?? I use one Willards Dominoe shaved down so it fits thru the top bung
Drill one end and suspend it with a piece of Stainless wire. They average out at 10gms each so after splitting the side off its down to around 6gms. Thats in 9.5L of 65%. Colours up pretty quick even with that small amount, an gives a nice raisen note to the spirit. I can post one up to you if you like. Just give me ahoy. :handgestures-thumbupleft:

I would second this, not because I have impirical evidence but Bugburners got 2 barrels and anything he's out in there takes 7-10 weeks and tastes magic! WBAB, CFW all of it comes out tasting so good! We've not had the same outcome with the dominoes!

Ok so a 10l barrel (holds more like 12.5) since 10/2 have put 25l in. (Barrel still full included in those 25l) taste is awesome. Had an overpowering vanilla taste had me bit dubious but has eased into a mild coconut flavour, prob half way between the two. Really smooth and awesome flavour considering it about 4m old. Whiskeys i have done in glass usually get the "cococonut taste round 6m.Big thumbs up to oak barrel . Now should be able let it sit longer between drinks. :handgestures-thumbupleft:

Picking up some barrels tomorrow, a 5, a 10 & a 20 litre. Bought off eBay, great price. Didn't say in the ad but the 2 smaller barrels are full of port. Will likely drain that into the largest one cos I don't have enough product to fill it yet.
Best I get stillin' :handgestures-thumbupleft:
