How much for how long?

Hi all,

So I'm still a little green regarding whisky :mrgreen: .

I've done two stripping runs now and one proper spirit run of a 100% pale malt all grain recipe.

Basically after cuts I'm left with about 4 Liters of spirit and about 2.5liters of feints. Firstly I would like to say that I'm sure I went into my heads and tails too much... allthough both tasted great.

I've also bought some medium toast french oak dominos/staves from a local shop.

Question: How much do you guys add, and for how long?
I've added 15grams a liter @ 65% abv. Just curious about time aged on staves/dominoes, and what you guys found ideal?

15gl 6ish months 10gl 12 or more. Just rule of thumb and you may like more or less. I now have two barrels keeping them full of spirit is the hard bit..

Is that per litre of spirit :think: I was under the impression it was between 10 to 13 grams per litre or roughly 1 domino....

Yep per litre. 15g for quicker 6month ageing. 12months I prefer 10. Lot of it is rule of thumb and normally do 1 domino per litre..

Fellow at HBS today tried selling me charred oak cubes. He reckons put whole 500gram bag with 5 litres :laughing-rolling:
Talk about hideous over oaking IMO.....

Well thats good for him for 2 reasons.
1: You buy more oak than necessaru so he can pay his rent.
2: It might, might mask the nastiness of the turbo yeast.

500g for 5 litres works ok if you only soak for 1-3 weeks (in my experience). I've been trilling the charred cubes for over a year (typically 2 x 2.5L batches per month)with some success. Always at 40% abv though as I'm carbon filtering before soaking. I've put a few trial variations down this week at 60% using double filtered & triple distilled TPW.

Hi Bluc,

Just to make sure, do you mean 15grams of chips per liter or 1 domino (45grams) per liter? At the moment I have one domino weighing 45 grams for 4 liters which gives me a total of 11.25grams/liter. Just want to check if I'm understanding this correctly!

I think it comes down to what you like, try lots of experiments and find out what works for you....
I have even tried 40 grams stave chunk in 1 litre jar and at 3 months it was not over Oaked. Dominos take a lot longer to overoak something than chips do. IMO and findings. :handgestures-thumbupleft:

somme guys put a lot in at start for a short period and then remove most and keep 10g /l for longer storage/ ageing . it all depends on your personal taste. I stick to around 10 g/l and wait longer.
