UJSM - Sweetness?

Postby Urrazeb » Wed Feb 13, 2013 8:28 pm

While we r on it, I put one Dom to about 4L BWKO and its getting pretty good now, been on a few weeks, macs right, use sparingly and stretch the age as long as possible. I'll be chucking the stick into a V8 bottle, topping up and LOCKING it away.

I just had a quick taste after 1 week on dominos. It's already taken some of the sweetness away, there is a slightly woody taste but not overpowering like I found with JD chips. I haven't tried it with coke bluess57, however I find coke tastes sweet unless your spirit has a strong flavor.

Regarding oak I have read everything from fill your glass with JD chips to a little goes a long way. I'm going to go with the advice on this thread and take out 2 sticks leaving 3 of my small dominoes to 5L at 60%. I would love to hear the specifics about your dominoes bluess57 so I can compare tastes as these things mature.

Thought I'd update the tasting notes in this thread. The initial sweetness with coke
has fully dissipated. This spirit IMHO is now very good. Love it. :-)
Trouble is now I'm down to my last 3 litres of it :-(
Good news is I did a bubbler run on the weekend and
have about 7-8litres over 90% to dilute down to 65%abv
