Another Oak Chip Question

Postby DRIFTER_016 » Mon Feb 10, 2014 3:35 am

Hey all
Currently aging my first batch of MacStill Rum on oak chips and had a question.
I have my rum in 1L jars @ 60% ABV and sitting on 1 table spoon of oak chips.
Half the jars on heavy toast the other half on medium toast.

Now to the question: I am going on vacation in 2 weeks and will be gone for almost 7 weeks.
The rum has been oaking for 1 week so far. Would I be better off leaving it on oak until I return from vacation or would it be better to remove the chips before I leave?
I don't want to over oak my rum. :o

Thanks for your help everyone. :handgestures-thumbupleft:

split them up 50-50. Leave half the jars to soak, and pull half. Cover your bases, and taste testing will tell what is better for you! Maybe you could then blend them to really tune it up.
Man this stuff is getting easy! LOL

reckon 10 weeks all up at 1 tablespoon per lt is a fairly heavily oaked spirit... I'd be reducing a fare bit...can always add but taking out oak flavour = blending pain/re run spirit.

I'm thinking throw all the oak into 1. Then you will have an oak essence to add more oak to this batch if needed and to any future batches that needs it.

especially if they are small chips- i would probably take about 3/4's out (ie leave a teaspoon in per L in) and leave it for the next 9 weeks then have a taste test

Thanks guys.
I am probably just going to pull them off oak later this week and leave it at that and see what happens with just airing out a day or two here and there.
I had a taste last night and think it's oakey enough for me.

We'll see how it tastes in April when I get back from vacation.
If needed I can always put a couple of chips in then.
