5 Litres of Rum @ 65%. How many Dominos?

Gday Folks,

I have a 5l demijohn of new Pujirum which sits at 65%.

Im looking to age it on American Oak Dominos.

Was wondering how many dominos should i be using?

Hi Woodys,

My general rule of thumb is 1 domino per litre. However, I do this at around 55% ABV (FOR 3 MONTHS). So im not sure if that is the same rate at 65% ABV

1 domino per L is a good guide. If you want a heavier oak flavour 1.5-2 dominos will work. 1 month and it is drinkable, 3+ months and it starts getting good.

I go about 1 to the Liter too, Id probably remove a couple ofter 2-3 months.

Ive only ever used oak chip until now.

Less for longer is best. I've been using two per gallon and enjoying the result. Anymore than that i find the wood takes over. This is based on an average of six months aging.

So Bushy, this is based on leaving all the wood in for the entire 6mths?

Or do you knock the ratio down over the time?

Reason being is that i might split the 5 litres and try a couple of different approaches.

Yeah mate. Both dominos in one demi for six months. The times i have tried more has bought about less favourable finished spirit. But this is just my opinion and experience. If you are going to split your rum up, then you have an excellent opportunity to try and compare different ratios.

No I actually thought I might be under doing it with everyone saying one domino to a litre.

I'm smack on with you Bushy, as I just put 4 dominoes in 9L, and previously I have had 2 dominoes in 4.5-5L...so I guess my ratio is a bit less than 1 per 2L. :handgestures-thumbupleft:

But then again, the earliest I have drank any 'aged' product is 9 months...

I've currently got 2 jars with 4L of 65% and 2 dominoes in each, and one jar with 2L and one domino... I'm planning to spice it, how long should I oak it before I start spicing?

I would spice asap and let it infuse. Check regularly and remove when desired spice is found. Then let it sit on the oak for a few more months/years.

That way maybe the spice profile will fully develop and age with the batch as opposed to being a seperate flavour

My rum only lasts about 3 months before I drink it and I have found 1 per L works well. If I can get it to last longer then I will probably use less.

I always weigh dominos before hand. Such a difference in weight and size. Weight is heaps easy to measure. I go 15g per litre. Minimum 6 months. Like they say less is more. You don't wanna over oak all the effort

Hay guys ive brought 2.5kg of oak through the group buy from Hava (thanks mate!) Ive got 6 dominos soaking in 62% question is when Im ready to drink can I water it down to 40%? Thinking 62% maybe abit to high

Also any good recipes yo help out with some neutral?
