Aging questions.

The Demi is a sugar head off the Fine Scotch Whisky that was 15g per litre of the French Oak Dominos from the group buy. This is after 4 weeks to the day. The left skull bottle is drinking proof whisky from a barrel that had been aging a year. I reckon the Demi would dilute close to that colour now. Not sure how much darker it will get.

I've been taste testing some of this rum and bourbon I have aging and I've never used oak before And can't really decide weather it is over done already. It does smell and taste woody but as it's still young I'm struggling to work out the oak. If I pull all the oak out will it miss out on some of the flavors that come over longer term being only on oak for 10 days. Should I just dilute it with some unoaked stuff or am I overreacting and the woody flavors will mellow in the long run. Never used oak so all new.

Dropped 4.5L of fine scotch whisky down with 4 dominoes in a glass demijohn at 65%, waited a month... started to panic thought that it was over oaking (strong wood notes). I removed 2 dominoes and waited another month, (testing in small amounts weekly at drinking ABV) and everything is starting to look, smell and taste like it is going in the right direction. Can't wait to give it a crack at 6 and 12 month mark.

Mate scotch is a hard beast to master for a reason, leave it as long as you can on minimum oak :handgestures-thumbupleft:

How do I know when enough is enough. I don't have the trained pallet of you guys. What are some indicators that it's getting close ?. I don't mean ready to drink but more ready to remove the domino. I have 1 domino split in 2 around 100mm long in each 1 litre of bwko. Its amazing the difference in just 2 weeks. I don't want to over oak it

1 split domino/L is about what I use, mate... The colour, and most of the flavour will happen quickly, but over time you will get some of the real tasty flavours that oak brings :handgestures-thumbupleft:

Thanks buddy. I just have been reading a lot about over oaking and I don't want to ruin my first run. If you get the amount right can the oak just stay in indefinitely? Does it stop offering anything after a time ?. Right now the smell has improved but it still tastes hot. It's a lot better than it was even just 2 days ago

Have you got more than one jar of product? Have a bit of a play, leave one jar untouched for a few months, and take the oak out of others at different intervals...

I find that my CFW is quite tasty after 6 or so weeks, but gets better after that, with the oak still in. I overoaked my first ever batch but it was still drinkable!
