Essencia Bourbon Chunks

I tried the chunks from Essencia as per packet instructions. 100grams per 2.25 litre for 2 weeks with 40% neutral. Smells woody, and taste is mild but not all that strong and not very smoky. I've added SS American classic bourbon to fill out the flavour. I'll see how that goes.

Don't listen to the packet ,
if you leave the spirit on those chuncks
for at least a month (2 months is better IMO)it gets a fairly nice flavor
without the need of added essence

I've tasted some pretty bloody nice booze that has been aged on these chunks, it was 40% vodka with nothing but the chunks in it ;)

Overall I think essencia make a pretty good product & still buy their Bailey's irish cream essence when I need to knock up a batch quickly :mrgreen:

Wouldnt these chips be subject to the same variables as sticks or barrels? ie increasing the alcohol content will give different flavour profiles?

Might be interesting to try a few different strengths, from most of the gear I have read about 60 -65% seems to be a winner.

I made one lot of this ages ago......just followed the instruction....40% neutral and add the chunks from memory.....It turned out well.........Ive still got one bottle stashed for a special occasion.

OK, added some SS classic american bourbon to the oaked neutral- tasted great, now thats what I'm after. Good smokinesss and raw oak with reasonable complexity. Might try a cheaper essence now and charr some chunks first also.
