Rum on toasted sticks

I have 2 demijohns with 5 litres of 63% and 4 toasted oak sticks in each. One has been on oak for 9 weeks the other for 1 week

Sticks are 15.5cm x 1.75cm x 1.25cm heavy toast no char. surface area of 4 sticks are about 236 cm^2

It is starting to taste quite good and the caramely vanilla flavors are starting to come through really nice

With a worry of overoaking, would you take any sticks out of the 9 week one or just let it continue?

how long do you plan to leave it on oak for?

minimum 6 months but id like to leave it a year if I can keep my hands off it

i would probably take out one and leave 3 for about 2 months, and then leave 2 for next 4 months

Just wondering where you can find the oak sticksI have only found the chips and staves.

I'd leave em in mate, at least for another two months. Then remove one and put it away and try to forget about it.

It's hard to give advice like this as each stick of oak is different and will age differently, you'll have to use your spidey senses on this one but the above is what I'd be leaning towards.

Haven't over oaked yet :pray:

The general rule is less oak for longer if you plan on aging for a while ;-)
