Aging And Airing

Postby stattonb » Fri Oct 16, 2015 8:00 pm

Hey guys so new to aging and oaking spirits and just wanted to see if im doing the right thing, i have everything i oak in 1ltre jars i let them sit for a month with bourbon staves and at 65% and thenlet them breath for a day then put some paper towel over the jar and add the lid which has six small holes drilled into it, my pla was to let them sit of 6 months like this im just wondering if this is the correct way to do it or not.
I have done alot of reading but there are mixed comments so im not sure.
Thanks

Wont you lose alot of your spirit if the container isnt sealed for 6months.

as long as it isnt too warm you wont lose much. and if your cuts are good you will lose even less.
personally i use cork and just open them up every so often to breathe. some ppl completely seal, others let breathe more

I let mine breath for a month thru 3 coffee filters then cork, once a month open for 24, in Tassie so no extreme ambient heat differences. Works for me. :handgestures-thumbupleft:

I've just put around 4L of 65% CFW on some medium toast American dominos.
I wanted it to have the best possible chance of airing so drilled a few holes in the lid and then screwed it on over a piece of stocking ....
I will report back every month or so regarding how much product or ABV is being lost.

I'm too tight arse to buy corks, I've just been rolling up paper towel and stuffing that in the neck of the flagon/carboy :))

I age in 5lt demis. I find that if they're half full I can leave them open (coffee filter on top) for a year without losing too much.
If I fill them right to the top I will lose a lot real quick.

My theory is that the spirit in the half full demi probably condenses on the side of the glass and the full one it probably just pours out into the atmosphere.
