Best way to age Bourbon?

Postby cap73n » Fri May 20, 2016 5:28 pm

Hi guys,
I've had a few goes at ageing my new make corn based spirit on virgin american oak with different levels of charring. But I can't seem to get that distinct resinous bourbon like flavour. It tastes alright but its lacking something. Could this be because bourbon barrels have a certain amount of sapwood in them? (i think its up to 25%). I break the spirit down to 65% for ageing and then leave it up to about 3 months on the oak so far. Could it just be that i need to leave it longer? When should it start to develop that resinous bourbon flavour? (i hope you all understand what I'm trying to describe when i say resinous bourbon like flavour) haha

I know with my corn based bourbon (UJSM), it has a resinous bourbon taste to it... if we are both talking about the same flavor profile. I use medium charred white American oak domino's, and after 3 months, I'd easily rather drink that over makers Mark or the like. Not a complex drink, but smooth and not too sweet.

Maybe your after that peppery profile that rye (I think it's rye) leaves.or maybe the flavor your looking for is some harshness from the tails?

What over the counter bourbons have the resinous flavor your talking about?

I feel like they all have it. My favourite bang for your buck bourbons are buffalo trace, four roses and russels reserve.

I feel like my new make spirit tastes similar to other bourbon new makes that Ive tried. So I'm adamant its got to be something to do with ageing that I'm not doing quite right.

Probably something to do with 7 or 10 less years on oak, perhaps?

:text-+1: what zac said.
I'm definitely not a bourbon drinker but my experience with aging rum (which is usually aged less than bourbon) tells me that 3months is a bare minimum. 6starts to get interesting and then it gets good.

Let it sit it'll come good.

Yep, try putting some in a 250L Ameican Oak charred barrel for 6 years ;-)

I know this isn't what you want to hear but it is the truth. :-|
